Rarbarber crumble 1

Ingredients

  • Between 6 to 10 sticks of rhubarb ( depending on the size)
  • 4 tbsp / 60 ml water
  • 8 tbsp / 110 g / 120 ml sugar

Chop the rhubarb in to bite size pieces and place in a pot with the water and sugar, don’t boil it just let it simmer for about 10 minutes until soft but not mushy (niet plat koken, het moet geen moes zijn).

  • 110 g / 4 oz butter, softened
  • 80 -100g (riet-) sugar (depending on how sweet you want it)
  • 50 g oats (haver)
  • 180-200 g flour

Mix together the butter, flour, oats and sugar in a bowl with your hands until the mixture is crumbly, if its too sticky then add more flour.  Put the softened rhubarb in an oven dish and cover with the crumble mixture and bake in the oven (180°) for 35 to 45 minutes until the topping is golden brown.

It can be eaten with custard, cream or yoghurt.  😉
